Fridges and Display Chillers — Common Faults and Correct Temperatures

Most AC companies in Riyadh will not touch commercial refrigeration. We have worked in it from the beginning — refrigeration is half our name. A home fridge, a grocery display chiller and a restaurant freezer are all refrigeration circuits, but their operating conditions and expected faults are entirely different.

Correct temperatures — start here

Before any diagnosis, get the number. Measure with a thermometer placed in a container of water in the middle of the fridge, not from the display panel alone, because the panel reads a single point that may be far from reality.

The chilled compartment should settle between 0 and 5°C. The freezer at −18°C or below. In shops and restaurants these figures are not a preference but a food safety requirement, and hours above them mean genuine risk to stock and to customers.

If the reading is consistently higher, do not simply turn the dial down. The dial does not add cooling capacity, and the cause is somewhere else.

The most common faults, in order

The order below is based on what we actually see, not what people assume. Most people jump to the compressor, and it is in fact near the bottom of the list.

  • A failed or hardened door seal: continuous warm air ingress. Test it with a sheet of paper — close the door on it and pull; if it slides out easily, the seal is not holding there.
  • A failed defrost system: heavy ice on the evaporator blocking airflow. The tell on shared-evaporator units is that the freezer stays cold while the fridge section does not.
  • A dirty condenser behind or beneath the unit: a layer of dust and lint preventing heat rejection. Among the easiest to fix and the most neglected.
  • A stopped evaporator or condenser fan: the machine runs but air does not move.
  • A failed thermostat or sensor: the unit runs constantly, or not at all.
  • A leak in the circuit: gradually weakening cooling with the compressor running continuously.
  • The compressor itself: less common than assumed, and diagnosed by measurement rather than by listening.

Display chillers in shops — harsher conditions

A display chiller in a grocery, pharmacy or restaurant works under conditions a home fridge never sees: a door opened dozens of times an hour, or an open front by design, ambient shop temperatures that can climb, and continuous load.

So its faults appear faster: the evaporator ices more, the condenser fouls sooner, door seals fail earlier, and air curtains on open units drift out of adjustment.

And there is a factor absent at home: the real cost of a failure is not the repair, it is the stock. A pharmacy losing cooling for hours, or a restaurant losing a freezer overnight, loses more than any repair costs.

We measure actual temperatures at several points rather than one, and check door seals, evaporator and defrost condition, condenser cleanliness, fan operation, circuit pressures and compressor draw in amps.

Then we tell you the numbers and what they mean before we start. Many cases where someone has said "the compressor is gone" turn out to be a door seal, a blocked condenser or a defrost fault — and that is a very different decision.

What temperature should a fridge and freezer hold?

The chilled compartment between 0 and 5°C, and the freezer at −18°C or below. Measure with a thermometer in a container of water in the middle of the fridge rather than from the display, because the display reads one point that may not represent the rest of the space.

The freezer is cold but the fridge is not. Why?

On units with a shared evaporator this is an almost certain sign of ice built up on the evaporator due to a defrost fault, blocking airflow to the chilled section while the freezer stays cold. It needs the defrost element, its timer and its sensor checked.

My fridge runs constantly and never cuts out. Is that a problem?

It is a sign the unit is not reaching its setpoint. Common causes: a door seal not holding so warm air enters continuously, a dirty condenser unable to reject heat, or a low charge in the circuit. Continuous running raises consumption and shortens compressor life, so it should not be left.

How do I tell if a door seal has failed?

Close the door on a sheet of paper and pull it out. If it slides out easily, the seal is not holding at that point. Repeat at several points around the door. A hardened or cracked seal leaks warm air continuously and is among the most common causes of weak cooling — and the cheapest to fix.
